Oatmeal Protein Cookies

These cookies only require 4 ingredients and they are SO good. They are very filling and have lots of protein in them! When they were baking they smelled like melted peanut butter cups, yum!!
 Ingredients Needed:

  • 1 large very ripe banana
  • 2/3 cup of natural peanut butter or nut or seed butter
  • 1 cup of whole rolled oats
  • 2 teaspoons of cinnamon
  • (Optional) 1/3 cup of dark chocolate chips
Instructions:
  1. Preheat oven to 350. Coat a cookie sheet with nonstick spray
  2. In a food processor, combine the banana, nut butter, oats, and cinnamon. Pulse until the whole thing has formed into a thick paste
  3. If you want to add chocolate chips, transfer the dough to a mixing bowl and add your chocolate. Stir in the chocolate until evenly distributed. 
  4. Roll the dough into 2 inch balls and evenly space them on the cookie sheet. Press down on the balls gently with a spoon. 
  5. Bake for 15 minutes and cool completely before eating or storing. {via}
