High Fiber Pancakes
These pancakes are low in sugar, high in fiber, and have healthy fats and protein! They keep me full for a long time and are super easy to make. I do not like the taste of eggs so I am trying to make healthy pancakes in order to hide the taste! Eggs are nutrient-dense and a good source of healthy fats and protein. This recipe is very simple and easy to make! This recipe is for 1 person, double or triple the recipe if you are making the pancakes for multiple people.
Ingredients:
- 1 egg
- 1 banana
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 3 tbsp almond flour
- cinnamon
- coconut oil
Toppings:
- nut butters
- chia seeds
- syrup
- berries
- granola
- jam
Directions:
- Heat a pan on medium, use coconut oil to coat the pan
- Peel the banana and put it in a bowl. Using a fork, mash up the banana until it is all smashed.
- Add the egg, baking powder, vanilla extract, and almond flour to the bowl and mix together
- Pour small amounts of batter onto the pan and cook both sides for 3-4 minutes
- Add some toppings and enjoy!
