High Fiber Pancakes

 These pancakes are low in sugar, high in fiber, and have healthy fats and protein! They keep me full for a long time and are super easy to make. I do not like the taste of eggs so I am trying to make healthy pancakes in order to hide the taste! Eggs are nutrient-dense and a good source of healthy fats and protein. This recipe is very simple and easy to make! This recipe is for 1 person, double or triple the recipe if you are making the pancakes for multiple people.


Ingredients:

  • 1 egg
  • 1 banana
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 3 tbsp almond flour
  • cinnamon
  • coconut oil
Toppings:
  • nut butters
  • chia seeds
  • syrup
  • berries
  • granola
  • jam



Directions:
  1. Heat a pan on medium, use coconut oil to coat the pan
  2. Peel the banana and put it in a bowl. Using a fork, mash up the banana until it is all smashed.
  3. Add the egg, baking powder, vanilla extract, and almond flour to the bowl and mix together
  4. Pour small amounts of batter onto the pan and cook both sides for 3-4 minutes
  5. Add some toppings and enjoy!
