Perfect Fall Soup

I am normally not a fan of soups; however, this soup was inspired by the green onion soup that my favorite restaurant serves. I tried to recreate it and it is perfect! It is more like a broth but it is perfect for the winter to warm you up!

Ingredients: 

  • carrots
  • celery
  • green onions
  • white onion
  • 2 quarts unsalted chicken stock
  • salt
  • soy sauce
  • minced ginger
  • minced garlic
  • toasted sesame oil

Directions:
  1. Get a large pot and heat it on medium
  2. Chop up the carrots, celery, green onion, and white onion
  3. Cook the white onion with the sesame oil in the pot until the onions are caramelized
  4. Add the celery, green onion, carrots, and broth after the onions are carmelized
  5. Add garlic, ginger, salt, and soy sauce into the pot. At as much or as little as you'd like, for this step I like to taste the soup to determine how much I add until it is perfect
  6. Stir and let the soup boil then keep it on low
