Perfect Fall Soup
I am normally not a fan of soups; however, this soup was inspired by the green onion soup that my favorite restaurant serves. I tried to recreate it and it is perfect! It is more like a broth but it is perfect for the winter to warm you up!
Ingredients:
- carrots
- celery
- green onions
- white onion
- 2 quarts unsalted chicken stock
- salt
- soy sauce
- minced ginger
- minced garlic
- toasted sesame oil
Directions:
- Get a large pot and heat it on medium
- Chop up the carrots, celery, green onion, and white onion
- Cook the white onion with the sesame oil in the pot until the onions are caramelized
- Add the celery, green onion, carrots, and broth after the onions are carmelized
- Add garlic, ginger, salt, and soy sauce into the pot. At as much or as little as you'd like, for this step I like to taste the soup to determine how much I add until it is perfect
- Stir and let the soup boil then keep it on low
